Yael's Spiced Foil-Baked Salmon
Family recipe from Mom Yael
My mom Yael's go-to oven-baked salmon: a bold garlic, lemon, and warm-spice rub massaged onto both sides of the fish and baked inside a folded aluminum-foil triangle tent so it stays tender and juicy.
- Prep
- 10 min
- Bake
- 30 min
- Oven
- 360°F (180°C), conventional
Method
- Mix the spice paste. In a small bowl, combine 2 tablespoons olive oil, 2 teaspoons lemon juice, ½ teaspoon (or slightly less) salt, ½ teaspoon ground black pepper, ½ teaspoon each of ground cumin, cayenne pepper, and ground coriander (or slightly more of those three, keeping them in equal amounts), and 5 crushed cloves of garlic. Mix well.
- Prep the salmon. Rinse the salmon fillet under cold water and pat it thoroughly dry.
- Season on foil. Line a baking tray with a large sheet of aluminum foil, shiny side up, leaving plenty of overhang to fold over the fish. Place the salmon in the center, skin-side down. With clean hands, spread the garlic-and-spice mixture over both sides of the fish and massage it in.
- Fold into a triangle tent. Bring the long sides of the foil up over the salmon and fold the edges together to form a closed triangle tent over the fish.
- Bake. Bake at 360°F (180°C) for 30 minutes.
